Ingredients

  • 2 tablespoons rice bran oil
  • 3 teaspoons minced garlic
  • 1 large can of black beans (29 ounces)
  • 1 yellow onion
  • 2 cups water
  • 1 teaspoon chipotle chili powder
  • 1 teaspoon cumin
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon dried oregano
  • 1 bay leaf
  • 2 tablespoons fresh lime juice

Directions

  1. Drain the can of black beans. Put them in a colander and rinse them, then set them aside.
  2. Dice onion into small pieces.
  3. Sauté onions in rice bran oil on the stove over medium-high heat. Once they are soft (approximately 5 minutes), add the garlic. Stir together and cook until fragrant (about 30 seconds).
