- In a bowl, combine mayo, Thai sweet chili sauce, sriracha, and honey.
- Transfer sauce to a saucepan on low to medium heat and let simmer while you prepare the shrimp.
- Add cornstarch to a shallow bowl or plate (something you can coat the shrimp in).
- One-piece at a time, coat shrimp with cornstarch on all sides.
- Heat oil in a skillet on medium to high heat.
- Add all shrimp to skillet, laying flat on the pan.
- Flip shrimp over after a few minutes or one side is golden brown.
- Once golden brown all over, remove the shrimp onto a plate covered in a few layers of paper towel. This will allow excess grease to drip out.
- Combine shrimp and sauce, stir well to coat.
- Wash and pull apart lettuce leaves and set them on a plate for serving.
- Dice green onion for garnish.
- Add shrimp on top of lettuce and top with green onion. Serve and enjoy!

- You could substitute the sriracha sauce for another chili sauce, however, I usually find the texture and flavor of sriracha are the best choices in this recipe.
